I’m always wondering how to get through the hot summer months feeling healthy and well.
.
When the weather is scorching,
even the thought of exercising can feel exhausting before I’ve even started…
.
And when it comes to going outside to play with my child,
the intense sunlight makes me hesitate.
.
On days with extreme heat and blazing sunshine,
I try to avoid going outside as much as possible.
.
When I do need to head out,
staying hydrated is essential.
.
I also try to get enough energy from snacks and other foods,
because taking care of ourselves in the heat really matters.
.
And, of course,
making sure to eat wholesome, home-cooked meals regularly
is just as important to me. 🙂
.
Today, I decided to make something a little different
using abalone,
a nourishing ingredient that I love during the hot summer months.
.
The dish I’m sharing is
Soybean Paste-Braised Abalone.
.
It might sound like an unfamiliar combination at first,
but as soon as you take a bite,
the familiar, savory flavor of Korean soybean paste
will have you reaching for another spoonful of rice.
It’s the kind of side dish that makes a simple meal feel extra special!
.
I’m sharing an easy recipe,
so if you find abalone at a good price,
give this dish a try! 👍🏻

Soybean Paste-Braised Abalone
Ingredients
- About 300 g (10.5 oz) abalone
- 1 onion
- ½ zucchini
- 1 tbsp doenjang (Korean fermented soybean paste)
- 1 tbsp cooking wine
- 2 tbsp water
- 1 tbsp muscovado sugar
- 1 tbsp ginger syrup
- 1 tbsp minced garlic
You can substitute corn syrup or oligosaccharide syrup for the ginger syrup.
.
Instructions
1. Prepare the vegetables.
Cut the onion and zucchini into thick slices.
Arrange them on the bottom of a pot.
.
2. Clean the abalone.
Scrub the abalones thoroughly with a brush.
Use kitchen scissors to remove the innards and teeth.
For a visual guide to cleaning the abalone, please refer to the video from 00:29.
.
3. Cut the abalone.
Cut the cleaned abalone into bite-sized pieces
and place them on top of the vegetables in the pot.
.
4. Add the sauce.
Place all the sauce ingredients in a small bowl
and mix well.
Pour the sauce evenly over the ingredients in the pot.
.
5. Simmer.
Cook over medium-low heat,
gently spooning the sauce over the abalone
so that the flavors are evenly absorbed.
Continue simmering until the ingredients are cooked
and the sauce has reduced slightly.

Gochujang Shiitake Mushroom Salad
A simple Korean-style side dish made with shiitake mushrooms and a sweet, spicy gochujang dressing.

- 1 tbsp apple cider vinegar
.
Instructions
1. Blanch the mushrooms.
Cut the shiitake mushrooms into bite-sized pieces
and blanch them in boiling water.
.
2. Season the mushrooms.
Once the mushrooms have cooled,
gently squeeze out any excess water.
Add the seasoning ingredients
and toss everything together until evenly coated.
.
.
Stir-Fried Radish (Munanamul Bokkeum)
A simple Korean side dish made with radish and scallions.

about the length of your index finger.

Add a small amount of the mushroom blanching water
to a pot or pan.
Add the radish and stir-fry gently.
.
3. Season and cook.

and continue cooking over low heat
until the radish is tender and the flavors come together.
.
4. Finish with sesame oil.
Turn off the heat,
then drizzle with sesame oil
and sprinkle with sesame seeds.
.
.
.
Please take good care of yourself in the summer heat.
I hope you enjoy a delicious dinner today
and have a peaceful, relaxing evening. 💛
