Instructions
.
1. Chop the vegetables.
Cut the onions, sweet potatoes, and carrot into small, bite-sized pieces.
.
.
2. Sauté the onions.
Heat a little butter or oil in a pot and add the onions. Sauté until they begin to soften.
If you’re serving the curry with pan-seared chicken thighs, cook the chicken first, then remove it from the pot and set it aside before sautéing the onions.
.
.
3. Add the remaining vegetables.
Once the onions become translucent or begin to turn golden brown, add the sweet potatoes and carrot. Stir-fry briefly to coat the vegetables in the oil.
.
.
4. Simmer until tender.
Add enough water to almost cover the ingredients. Bring to a simmer over medium heat and cook until the vegetables are tender.
.
.
5. Season the curry.
Reduce the heat to low. Stir in the curry powder and salt, or season with your preferred alternative. Mix well and adjust the seasoning to taste.
.
.
6. Thicken the curry.
In a small bowl, mix the potato starch with 2 tablespoons of water until smooth. Pour the mixture into the pot, stirring well to prevent lumps. Simmer gently until the curry reaches your preferred consistency.
.
.
7. Add your favorite toppings and serve.
You can add your chosen toppings to the pot and let them simmer briefly in the curry, or arrange them beautifully on top when serving.
.
Serve warm over a bowl of rice for a simple, comforting dinner.
I hope this easy, homemade meal helps you enjoy a satisfying and nourishing day. 🩷
