One-Pot Vegetable Rice | Easy One-Bowl Dinner

.

.

.

The fridge is almost empty.

What am I going to make for dinner today..?

.

Coming up with breakfast and dinner ideas

every single day,

and then actually making them,

sometimes feels like an endless loop.

.

The side dishes we make all the time

start to feel like the same old thing,

and when the kids or your husband

start complaining about the food you made,

it can really test your patience..!!

.

When that happens,

give yourself a break

and make an easy one-pot rice dish

that can take care of today’s meal in one go.

.

When you combine

carbohydrates, protein, and vegetables

all in one bowl,

you don’t need to make several side dishes

to put together a wholesome, satisfying meal.

.

You can use whatever vegetables

you have tucked away in the back of the fridge,

and mix and match different ingredients

to create your own version.

And because there’s no need to stir-fry the ingredients in oil,

it’s a lighter and healthier one-bowl meal

than fried rice. 🙂

.

  • 300–350 g rice, 1 onion, ½ carrot, ½ zucchini
  • Soy sauce, sesame oil

.

.

Optional Add-Ins

.

  • For protein 🩷 Tofu, eggs, ground beef, or ground pork
  • For a lighter meal 🩷 Daikon radish, napa cabbage, eggplant, or mushrooms
  • For extra color 🩷 Scallions, chives, or parsley

.

.

How to Make It

.

1) Rinse the rice and soak it in an equal weight of water.

  • For white rice, soak for about 30 minutes before cooking.

.

.

2) Finely chop the vegetables you’ll be adding to the rice pot.

.

.

3) Add the soaked rice and water to a pot and bring to a boil over high heat.

.

.

4) Once the water starts boiling, reduce the heat to low. Add all the chopped vegetables and stir gently to combine.

.

.

5) Cover and cook over low heat for 20–25 minutes. Turn off the heat and let it steam, covered, for at least 5 minutes.

.

.

6) Serve in bowls and season to taste with 1–2 tablespoons of soy sauce and a drizzle of sesame oil. Mix well and enjoy.

.

.

.

This one-pot rice is great on its own,

but you can also use the leftovers

in so many different ways—

as a rice bowl,

in inari sushi,

or wrapped up in kimbap. 💛
