Seasoned Korean Vegetable: A Quick, Flavorful Herb Salad

.

.

.

Chamnamul is a wonderfully versatile Korean green

that can be enjoyed as a fresh salad or a traditional Korean side dish.

.

It has a distinctive, aromatic flavor that some people absolutely love,

while others may find it a little unfamiliar.

.

But here’s the fun part:

depending on the dressing or seasoning you choose,

chamnamul can be refreshing and tangy, pleasantly savory and slightly bitter, or deeply flavorful and perfect for serving with rice.

.

It’s an ingredient that can transform in so many ways.

.

I like to keep it in the fridge because it works beautifully alongside both Korean meals and Western-style dishes.

.

Today, I’m sharing a simple Korean-style seasoning

that pairs especially well with meat dishes.

.

Its savory, slightly spicy flavor makes it a wonderful addition to a Korean home-cooked meal.

Seasoned Korean Vegetable Greens

.

.

Ingredients

.

  • 50 g chamnamul (Korean aromatic greens, Vegetable)
  • ½ tbsp minced garlic
  • 1 tbsp Korean red pepper flakes (gochugaru)
  • 1 tbsp fish sauce
  • Sesame seeds, to taste

.

.

For a Refreshing Citrus Dressing 💛

.

For a lighter, tangy alternative, gently toss the chamnamul with:

  • 1 tbsp yuja-cheong (Korean citron preserve)
  • 1 tbsp water
  • 1 tbsp soy sauce (optional)

This citrus version is bright, refreshing, and especially lovely when you want a lighter side dish.

.

.

Instructions

.

1. Prepare the Vegetable.

Cut the greens into bite-sized pieces, roughly the length of your little finger. Wash thoroughly under running water and drain well.

You can also wash the greens before cutting them, if that’s easier. 🙂

.

.

2. Season the greens.

Place the washed chamnamul in a large mixing bowl. Add the minced garlic, Korean red pepper flakes, and fish sauce. Toss gently until the greens are evenly coated.

.

.

3. Finish and serve.

Transfer to a serving plate and sprinkle with sesame seeds.

Serve immediately as a fresh Korean side dish (banchan), especially alongside grilled meat, rice, and other Korean dishes.
