Creamy Mushroom Gnocchi Recipe

.

Ingredients

.

For the Gnocchi

  • 3 potatoes
  • 1 tsp salt
  • 3 tbsp almond flour
  • 1 egg yolk

.

For the Creamy Mushroom Sauce

  • 1/2 onion
  • 10 button mushrooms
  • 1 tbsp salt
  • 200 ml heavy cream
  • 1 knob of butter

.

.

Instructions

.

1. Steam the potatoes.

Cut the potatoes into small pieces and steam them in a pot until tender.

.

2. Remove excess moisture.

Once the potatoes are fully cooked, drain off any remaining water. Return them to the pot and gently heat over low heat, stirring to help evaporate excess moisture.

.

3. Mash the potatoes.

Transfer the potatoes to a large bowl and mash until smooth. For an extra-smooth texture, press them through a fine-mesh sieve.

.

4. Make the gnocchi dough.

Add the salt, almond flour, and egg yolk. Mix until everything is evenly combined.

.

5. Shape the gnocchi.

Roll the dough into small, round pieces. Gently press each piece with a fork to create the classic gnocchi ridges.

.

6. Bake the gnocchi.

Arrange the gnocchi on a baking tray and bake at 170°C (340°F) for 10 minutes.

.

7. Prepare the vegetables.

Cut the onion and button mushrooms into pieces roughly the same size as the gnocchi.

.

8. Sauté the vegetables.

Melt a little butter in a pot over medium-low heat. Add the onion and mushrooms and sauté until softened.

.

9. Make the creamy sauce.

Pour in the heavy cream and add the salt. Bring the sauce to a gentle simmer, then add the baked gnocchi. Stir gently over low heat until the gnocchi are coated in the creamy mushroom sauce.

.

Important Note: This gnocchi dough is intended for baking only. Do not boil the shaped dough, as it may fall apart in the water.

.

.

I hope you and your family enjoy a warm, comforting meal together and end the day on a cozy note. 🧡
