Easy Oven-Roasted Chicken and Vegetables (Sheet Pan Chicken)
.
.
Ingredients
.
- 800 g chicken drumsticks (about 2 packs)
- 1 tbsp salt
- 2 tbsp potato starch
- 1 tbsp curry powder
- A little water
- 1–2 onions
- ½ zucchini
- ⅓ carrot
- A pinch of additional salt, for roasting
- A little butter
- Dried parsley or grated cheese, for garnish
.
.
Instructions
.
1. Parboil the chicken.
Place the chicken drumsticks in a pot of water and bring to a boil briefly. This helps remove excess impurities before roasting.
.
.
2. Remove excess fat.
Drain the chicken and remove the skin and any excess fat, if desired.
.
.
3. Prepare the seasoning.
In a small bowl, combine the salt, potato starch, curry powder, and a little water. Mix well to form an even seasoning mixture.
.
.
4. Season the chicken.
Coat the chicken drumsticks evenly with the seasoning mixture.
Alternatively, place the chicken in a pot and spread the seasoning over the pieces directly.
.
.
5. Prepare the vegetables.
Wash the onions, zucchini, and carrot thoroughly. Cut them into generous, bite-sized pieces and arrange them in the pan alongside the chicken.
.
.
6. Partially cook on the stovetop.
Place the pan over medium-low heat and cook the chicken and vegetables briefly before transferring them to the oven.
.
.
7. Roast in the oven.
Turn the chicken drumsticks over, then add a pinch of salt and a little butter for extra flavor.
Transfer the pan to a preheated oven and roast at 170°C (340°F) for 20 minutes.
.
.
If you’re skipping the stovetop cooking step:
Place the seasoned chicken and vegetables directly in an oven-safe pan. Roast at 170°C (340°F) for 20 minutes, turn the chicken over, and roast for another 20 minutes.
Cooking times may vary depending on the size of the chicken pieces and your oven. Make sure the chicken is thoroughly cooked, reaching an internal temperature of 74°C (165°F) at its thickest part.
.
.
8. Garnish and serve.
Sprinkle with dried parsley or grated cheese to add an extra layer of flavor.
Serve warm, straight from the pan, and enjoy!
