Everyday home-cooked meals have a special kind of comfort.

.

There’s something wonderful about familiar food that tastes delicious, satisfies our hunger, and leaves us feeling warm and content. I think that’s one of the things that makes Korean home cooking so special.

.

But every now and then, it’s nice to try something a little different—to bring new flavors to the table and enjoy a taste of somewhere far away.

.

Sometimes, a new dish is all it takes to brighten an ordinary day.

.

Today, I’m sharing an easy homemade version of Chicken Jambalaya,

a flavorful one-pot rice dish with roots in the American South.

.

Jambalaya is traditionally made with rice, vegetables, seasonings, and a combination of meat or seafood. Depending on the recipe, its texture can fall somewhere between a fluffy rice dish and a moist, risotto-like meal.

.

With just tomato sauce and chicken stock, you can create a colorful, comforting one-pot meal right in your own kitchen. It’s simple, satisfying, and perfect for a busy day. 🙂

Chicken Jambalaya Recipe

.

Ingredients

.

  • 1 onion
  • ⅛ head of cabbage
  • ¼ carrot
  • 200 g chicken breast

Tip: This is a great recipe for using up leftover vegetables in your fridge.

For extra flavor, try adding sliced sausage, bacon, shrimp, or your favorite toppings.

.

For the Rice

  • 250 g uncooked rice
  • 250 ml water, for soaking the rice

.

For the Sauce

  • 2 tbsp chicken stock
  • 150 g tomato sauce
  • Peperoncino or red pepper flakes, optional, for a little heat

.

.

Instructions

.

1. Rinse and soak the rice.

Wash the rice thoroughly under running water, then soak it in an equal amount of water.

.

2. Prepare the ingredients.

Finely chop the onion, cabbage, and carrot. Cut the chicken breast and any additional protein, such as shrimp, into bite-sized pieces.

.

3. Sauté the vegetables.

Heat a little oil in a pot over medium heat. Add the chopped vegetables and sauté until they begin to soften.

.

4. Add the chicken and rice.

Once the vegetables are lightly cooked, add the chicken and any additional meat, such as sausage. Add the soaked rice and stir-fry everything together briefly.

.

5. Add the sauce and stock.

Stir in the chicken stock and tomato sauce until evenly combined. Pour in the water used to soak the rice and mix well.

Add peperoncino or red pepper flakes if you’d like a little spicy kick.

.

6. Cook the rice.

Cover the pot with a lid and cook over low heat for about 20 minutes, or until the rice is tender and the liquid has been absorbed.

.

7. Let it rest and serve.

Turn off the heat and let the jambalaya rest, covered, for at least 5 minutes. Fluff gently and serve warm. 🙂

Familiar, yet wonderfully different.

Bring a little color and a touch of adventure to your everyday table with this vibrant one-pot meal. Sometimes, a simple change in what’s on your plate is all you need to make the day feel a little brighter. 🌼
