How to Make Japchae Rice Bowls
.
1. Soak the glass noodles.
Place the glass noodles in a large bowl of water and soak for about 1 hour, or until softened.
.
2. Prepare the vegetables.
Thinly slice the onion, carrot, and any other vegetables you have on hand into matchstick-sized strips.
.
3. Heat the pan.
Place a large, wide frying pan over medium-low heat and add a little cooking oil.
.
4. Stir-fry the vegetables.
Add the sliced vegetables and muscovado sugar. Stir-fry until the vegetables begin to soften.
- If you’d like to season the vegetables with a little extra salt, add 1 tsp salt while stir-frying.
.
5. Add the noodles and sauce.
Add the soaked glass noodles, soy sauce, minced garlic, and water. Reduce the heat to low and stir-fry until everything is evenly combined and the noodles are cooked through.
.
6. Finish with sesame oil.
Once the noodles are fully cooked, turn off the heat. Drizzle with sesame oil and toss everything together.
.
7. Serve over rice.
Spoon the warm japchae over a bowl of rice and enjoy!
.
.
To complete the meal, I made a simple salad with leftover microgreens and chestnuts from the fridge, then steamed some dumplings to serve on the side.
A simple, comforting dinner made with ingredients I already had at home. 💛
