and I find myself craving warm, comforting soups and stews.

But once the sun comes out,
the chilly morning air seems to disappear,
and before long, the weather is warm enough to work up a sweat.
So I’m not quite ready to give up refreshing dishes just yet.

That’s why today,
I’m sharing one of the easiest cold pasta dishes
I used to make all the time during the hot summer months.

Once you find a dressing you love,
you can easily switch up the toppings with whatever seasonal ingredients you have on hand.
It’s simple, versatile, and so convenient. 🙂

Cherry Tomato & Basil Pasta — A Simple Cold Pasta for Breakfast or Brunch
Ingredients
- Cherry tomatoes, fresh basil, button mushrooms, short pasta
- 1–2 tbsp soy sauce, 1 tbsp muscovado sugar, olive oil, lemon juice

How to Make It
- Wash the cherry tomatoes and basil thoroughly, then cut the tomatoes into bite-sized pieces.
- Blanch the button mushrooms first in boiling water.
- Cook the pasta in the same water used to blanch the mushrooms for at least 10 minutes, or until fully cooked.
- Drain the pasta and transfer it to a large bowl. Add the mushrooms and cherry tomatoes.
- Pour over your favorite dressing and toss everything together until well coated.
- I used soy sauce, olive oil, muscovado sugar, and honey.
- Transfer to a plate and finish with fresh basil.
