Today’s Easy Meal: Creamy Mushroom Pasta & Plum Sprout Salad

After a whole week of rain,
yesterday felt especially gloomy, both physically and emotionally.

.

Thankfully, the rain finally stopped for a little while yesterday afternoon.

My child got to spend some long-overdue time playing at the playground with friends,
and by the time we came home, those hungry little tummies were asking for dinner.

I needed something quick and easy to put together.

.

So I used up the short pasta we had left in the pantry
and made a creamy pasta with milk and cheese.

.

For a refreshing side,
I made a simple salad with fresh sprouts and plums from the fridge. 🥗

.

Here’s my super-simple homemade creamy pasta recipe. 💛

Creamy Mushroom Pasta

Ingredients (Serves 2)

  • 1/2 onion, 10 button mushrooms, about 200 g pasta
  • 1 tsp salt, 150 ml milk, 2 slices cheddar cheese

❤️ For a little heat

  • 1 tbsp peperoncino

How to Make It

  1. Add enough water to a pot to cover about 80% of the pasta, then add the pasta and bring to a boil.
  2. Once the water starts boiling, add the milk and reduce the heat to low.
  • Keep the lid off after adding the milk, as it may foam up and boil over.
  1. Cut the onion and button mushrooms into small, bite-sized pieces.
  2. Add the vegetables and salt to the pot. Stir occasionally so the pasta and vegetables cook evenly.
  3. Once the pasta and vegetables are fully cooked, add the cheddar cheese and stir until everything is well combined.
  4. Turn off the heat, cover the pot, and let it sit for about 5 minutes.
  5. For a spicy version, first set aside the portion for my child.

Then add about 50 ml of milk and the peperoncino to the remaining pasta. Simmer gently over low heat for about 5 minutes, allowing the sauce to reduce slightly.

I topped the pasta with fresh sprouts and plums,
then finished the salad with a drizzle of honey and lemon juice.

I love the combination of creamy and spicy flavors,
so I really enjoyed this version too. 🙂

And just like Korean spicy rice-cake soup,
this pasta is especially delicious when you eat it with a spoon. 👍🏻
