채소와 고기, 그리고 밥을 넣어 끓여 낸.

They’re made by slowly simmering bone-in meat to create a flavorful broth, then adding vegetables, meat, and rice to make something truly nourishing.

오늘 소개하는 닭곰탕도

뼈 있는 닭고기를 오래 끓여 육수를 만든 후

마늘과 당면을 넣은 국 메뉴예요.

Today’s recipe, Dak Gomtang, is one of those comforting meals.

It’s a traditional Korean chicken soup made by simmering a whole bone-in chicken for hours until the broth becomes rich and deeply flavorful. Garlic and glass noodles are then added, creating a bowl that is both hearty and soothing.

닭곰탕 Dak Gomtang (Korean Chicken Soup)

재료

  • 닭 1마리, 마늘 10알, 당면 한 줌
  • 소금 1/2T

Ingredients

  • 1 whole chicken
  • 10 garlic cloves
  • A handful of glass noodles
  • 1/2 tbsp salt

만들기 Instructions

1) 닭은 냄비에 한 번 끓여 내 물은 버리고, 새로운 물에 다시 중약불에 끓여요.

Place the chicken in a pot, bring it to a boil once, and discard the water. Refill the pot with fresh water.

.

2) 닭이 모두 익고, 국물이 우러나면 닭고기와 불순물을 모두 건져내요.

Simmer the chicken over medium-low heat until fully cooked and the broth becomes rich and flavorful.

Remove the chicken and skim out any impurities from the broth.

3) 닭 육수에 통 마늘, 당면, 소금 간을 해 약불에 은근하게 끓여요.

Add the whole garlic cloves, glass noodles, and salt to the broth. Let it simmer gently over low heat.

4) 닭은 살코기를 잘게 찢은 후, 냄비에 다시 넣어 5분 이상 끓여요.

Shred the chicken meat into bite-sized pieces, then return it to the pot and simmer for at least 5 more minutes.

미역 초무침 Sweet and Tangy Seaweed Salad

재료

  • 건 미역 한 줌
  • 고추장 1T, 다진 마늘 1T, 올리고당 2T, 사과 식초 2T

Ingredients

  • A handful of dried seaweed
  • 1 tbsp gochujang
  • 1 tbsp minced garlic
  • 2 tbsp oligosaccharide syrup (or corn syrup/honey)
  • 2 tbsp apple vinegar

만들기 Instructions

1) 건 미역은 30분 이상 물에 불려요.

Soak the dried seaweed in water for at least 30 minutes until fully rehydrated.

.

2) 끓는 물에 불린 미역을 살짝 데쳐요.

Briefly blanch the soaked seaweed in boiling water.

.

3) 데친 미역은 찬 물에 씻어 물기를 꽉 짜낸 후, 칼 또는 가위로 잘라요.

Rinse it under cold water, squeeze out all excess moisture, and cut into bite-sized pieces using a knife or kitchen scissors.

4) 커다란 볼에 자른 마역을 담고 양념 재료를 넣어 고루 버무려요.

Place the seaweed in a large bowl, add all the seasoning ingredients, and toss until evenly coated.
