소고기 청국장 Beef Cheonggukjang
재료
– 소고기 300g, 무 (검지손가락 한 마디 두께), 배추 4장, 애호박 1/2개, 두부
– 된장 1T, 청국장 1팩 (150g 내외)
Ingredients
- 300g beef
- Radish (about the thickness of one finger joint)
- 4 napa cabbage leaves
- 1/2 zucchini
- Tofu
- 1 tbsp doenjang (soybean paste)
- 1 pack Cheonggukjang (about 150g)

만들기 Ingredients
1) 무, 배추, 애호박은 한 입 크기로 썰어 냄비에 담아요.
Cut the radish, napa cabbage, and zucchini into bite-sized pieces and place them into a pot.
.
2) 재료의 높이 만큼 물을 넣은 후 강불에 익혀요.
Add enough water to reach the height of the ingredients, then bring to a boil over high heat.
.
3) 소고기도 같이 넣어 끓여요.
Add the beef and continue boiling together.
.
4) 육수가 끓으면 약불로 줄이고, 표면의 육수 거품을 제거해요.
Once the broth starts to boil, reduce to low heat and skim off any foam from the surface.

5) 고기의 크기가 크다면 한 입 크기로 잘라요.
If the beef pieces are too large, cut them into bite-sized pieces.
.
6) 된장을 채에 걸러 국물만 내고, 청국장을 넣어 으깨요.
Strain the doenjang through a sieve to dissolve it smoothly into the broth, then add and mash in the Cheonggukjang.

7) 재료가 모두 익으면 두부를 넣은 후, 약불에 10 분 이상 끓여요.
Once all the ingredients are fully cooked, add the tofu and simmer over low heat for at least 10 more minutes.

8) 제철 나물 (부추, 쑥, 참나물 등)을 넣어 향을 더해주면 더욱 맛있어요.
For even more flavor and aroma, add seasonal greens such as garlic chives, mugwort, or Korean parsley before serving.

부추 무침 Seasoned Garlic Chives
재료
– 부추 100g 전후
– 다진 마늘 1T, 액젓 2T, 고춧가루 2T, 참깨 1T
Ingredients
- About 100g garlic chives
- 1 tbsp minced garlic
- 2 tbsp fish sauce
- 2 tbsp Korean chili flakes
- 1 tbsp sesame seeds

만들기 Instructions
1) 부추를 깨끗이 씻은 후, 새끼손가락 길이로 썰어요.
Wash the garlic chives thoroughly, then cut them into short pieces about the length of your little finger.

2) 커다란 볼에 썰은 부추와 양념 재료를 넣어 고루 버무려요.
Place the chives into a large bowl, add all the seasoning ingredients, and gently toss until evenly coated.
